One timeless practice cannot be replaced.
Pickers select, clean and shape each bunch. No grape is picked at Pandol until it is at its peak of sweetness. Grapes do not continue to ripen after they are picked. Immediately after harvest the grapes are rushed to pre-cooling rooms where the pulp temperature is reduced to at least 45 °. Following pre-cooling, the fruit is transferred to a cold storage room where it is maintained at a temperature of 31 °. |
